Apple employees and shareholders have issued an open letter urging the company to stop matching employee donations to organisations connected to the Israeli military's actions in Gaza and illegal settlements in the West Bank. The letter calls for an immediate investigation and the cessation of matching donations to organisations that support illegal settlements and the IDF.

The most logical alternative: Use Huawei, which has been sanctioned by the US government and does not include Google services. If Huawei is not available in your region, you may use brands like Xiaomi, Oppo, Tecno, etc and de-Google through flashing LineageOS or some other open source third party OS.
