I think a lot of people are misinterpreting the recognition of Palestine by various western countries. Yes, it is a good thing for Palestinians and a step in the right direction, but it won't work long-term.
Palestine is a fractured state, ran by two main political parties that have been engaged in conflict for nearly two decades: Fatah and Hamas. Fatah (the current internationally recognised governing body of the State of Palestine) operates only in the West Bank, and administers almost all Palestinian cities, refugee camps, and enclaves in the West Bank. They are not strong; they maintain very limited authority over their territory and hardly function as a state. They are constrained and effectively controlled by Israel, with their only effective independence being on the international stage, where they are very outspoken against Israel.
However, behind closed doors, the PA operates very closely with Israel militarily, with much of their funding coming from Israeli-controlled tax revenues from Palestinian workers. Without these transfers, the PA would collapse within months, so naturally they work with Israel by sharing intelligence on militant cells in the West Bank, while cooperating with the IDF on the ground. An example of this is during the invasion of Jenin Refugee Camp, where the PA carried out a failed military operation aimed at dismantling a local armed group known as the Jenin Battalion. After over 40 days of fighting, a ceasefire was signed. Israeli forces then took over the invasion just over a week later in cooperation with a PA withdrawal.
So basically, the point I'm trying to make is that recognition of Palestinian statehood is purely symbolic, and a stance against the crimes Israel has committed. The current internationally recognised government in Palestine is very weak and could disappear if Israel chose to cut funds. Israel doesn't do this, because establishing a permanent presence across all of the Palestinian populated areas of the West Bank would stretch their ground forces way too thin, and would require additional mobilisation, which is very unpopular in Israeli society.
The PA exists as an entity that covers an area and frees up Israeli forces for other more "important" areas, such as Gaza, Lebanon, and Syria. If Israel collapsed today, the PA would collapse shortly afterwards as it is physically impossible for it to govern a much larger area, let alone without Israeli support.
