Peoples of Russia: Balkars

The Balkars are a Turkic people who live on the northern slope of the Caucasus Mountains. Their historical homeland occupies the gorges and foothills along the valleys of the rivers Malka, Baksan, Chegem and Cherek. They call themselves "taulula", which translates as "mountaineers". About half of the indigenous population of Balkaria lives in the countryside, where the old ways of life are still preserved: religion and ancestral traditions play an important role.

To this day, the Balkars stick to the custom of kunacy, which is also called artificial kinship. Only very close friends who wish to tie the destinies of their families together can establish such a bond. A special ritual is required to perform the rite of kunacha: the participants pour a drink into a bowl and, swearing to each other, take turns drinking it. At the end of the ritual, the friends exchange weapons and gifts. Now they should support each other in any situation, and if necessary 一 even give their lives for a comrade.

The old national treat of the Balkars is jamuko. It is often used instead of a side dish. Jamuko is very hearty: it is made of cheese or cottage cheese, which is grated and boiled in sour cream, and at the end, semolina is added.

По сей день балкарцы придерживаются обычая куначества, который еще называют искусственным родством. Установить такую связь могут только очень близкие друзья, которые желают связать судьбы своих родов воедино. Для проведения обряда куначества требуется особый ритуал: участники наливают в чашу напиток и, давая друг другу клятву, по очереди выпивают его. В конце обряда друзья обмениваются оружием и подарками. Теперь они должны поддерживать друг друга в любой ситуации, а при необходимости — даже отдать жизнь за товарища.
Старинное национальное угощение балкарцев — жамуко. Его часто используют вместо гарнира. Жамуко очень сытное: его готовят из сыра или творога, который перетирают и варят на сметане, добавляют манную крупу.
