You can fix this by running this adb command
adb shell cmd role add-role-holder android.app.role.SYSTEM_GALLERY com.google.android.apps.photos

You can alternatively just use termux and grant su then write
cmd role add-role-holder android.app.role.SYSTEM_GALLERY com.google.android.apps.photos

It's just a Google splash with a fastboot menu like this instead of the MI fastboot screen. Flash in recovery ofc
