American Folk Nation’s based chicken recipe:

So good I forgot to take a picture of it cooked before it was half gone

Preheat oven to 425 F

Remove chicken giblets. Rinse chicken if necessary and remove pin feathers. Pat dry.

Liberally grease with butter or bacon fat outside, inside, and underneath chicken skin. Be careful when getting under the skin to not Pierce it. Carefully slide fingers under the skin starting near cavity.

Liberally season with spices. Salt, (lemon) pepper, garlic powder, onion powder on outside, under skin, and in cavity.

Cut up 1 large onion and line pan with slices of onion. Add any left over in the cavity. Cut up a head of garlic and place some cloves within the cavity. Mince the rest and hold onto it for later.

Place chicken on top of onion layer in pan. Wash baby carrots and place around chicken. Alternatively you can use cut up potatoes or use both as the side.

Add same spices as before over carrots/potatoes liberally. Also take minced garlic and add over them.

Cut up 1 large lemon into two halves. Slice one half and quarter the other. Place the quarters in the chicken and the slices around the pan over the carrots/potatoes.

Finish by adding thyme, rosemary or any other herbs you like in the cavity. Then tie the legs closed together. Then add any extra bacon grease/butter over the carrots/potatoes and put the pan in the oven.

Cook for 1 hour 15 mins rotating half way through.

Remove from oven and let sit for about 10-20 mins before cutting and serving.

Fresh homemade bread
Compressed cabbage will lose water due to the applied salt. In this water, bacteria will start a fermentation process and make the kraut soft and sour.

The end product is rich in multiple vitamins, especially vitamin B12.

Recipe for sauerkraut:

~ 5kg white cabbage
~ 50g salt
~ 50g caraway seed
- some bay leaves
- a pot which holds ~5 litres

Take two big leaves of the cabbage (one for putting it at the bottim of the pot, one fir the top) and put them aside.

Chop the cabbage into fine pieces, put one of the leaves into the pot and start creating layers of ~3cm chopped cabbage in. Stomp the layers to compress them. On each layer put salt and caraway seed. Repeat until the pot is almost full or you are out of cabbage.

On top put the second big leave and something, like a clean stone, to keep the compression.

Put to some place without sun and keep it there for at least 2 months. Check regularly.
